The chocolate factory

Milan, 6th December 2024 – In the heart of Milan, inside an old stable of the late eighteenth century in Via Gian Giacomo Mora 18, Enrico Rizzi will inaugurate the “Chocolate Factory” (Fabbrica del Cioccolato), the first “bean to bar” factory in city centre.

This unique space represents the ambitious project to produce excellence chocolate starting directly from chocolate beans, the chocolate raw material addressed to the boutique in Via Correnti 5, where pralines and macarons are made but also customised creations for restaurants and luxury hotels of cuvée privée line.

An immersive travel in a Peruvian plantation

The factory offers an unforgettable and immersive experience to visitors: the route starts in the sensory room, where, thanks to “Virtual Reality 360” technology it is possible to explore a cocoa tree plantation in Perù, living the harvest, fermentation and drying phases of beans, thus allowing visitors to have a realistic and captivating perception of space.

The visit continues through the roasting room, equipped with a modern induction system, and the cioccoteca (chocolate room), an environment with monitored temperature and humidity, where chocolate has to stand and is sharpened in spices, tea and infusions. In the end, inside the workshop area, it is possible to be present at the processing of cocoa beans, from separation of peels to the slow stone grinding (until 80 hours).

Exclusive tastings and excellence chocolate

In conclusion of the visit, there will be a guided tasting of three or five single-origin chocolates, among which very refined Venezuelan varieties as Chuao and Porcelana. In addition, in the small area dedicated to purchases, 18 “grand cru” of chocolate bars will be available in different types like white, milk, dark and mass. Each type is rigorously vintage, single-origin and accompanied by a tasting sheet.

Who is Enrico Rizzi

Enrico Rizzi has been a Milanese pastry chef and ice cream maker for over 14 years. His culinary adventure was born from passion for cuisine and developed in the high gastronomy sector, where he took his first steps in 2003, starting a successful series of high level banqueting services. In 2010, his passion for sweet flavours pushed him to specialise himself in pastry making, beginning the course of his studies and experimentations aimed at the creation of sought-after and high quality products. This course culminated with his boutique inauguration of handmade pastry making in Milan, in Via Correnti 5. Enrico Rizzi’s pastry shop is not only a point of sale, but a real sensorial experience: a visible artisan workshop, where customers can admire the pastry chefs’ work and taste their creations in different moments of the day. With his new approach and an accurate attention to every detail, Enrico Rizzi turned his passion into a point of reference for confectionery excellence.

The Chocolate Factory will be inaugurated from Tuesday to Saturday, with three/four guided visits a day. Reservations will be available really early on the official website: enricorizzi.com
